Ingredients
2 tbsp olive oil
1 red onion, sliced
2 garlic cloves, crushed
1½ tsp mild chilli powder
2 green chillies, de-seeded and chopped
255g/9oz vegetarian mince such as Quorn
85g/3oz chestnut mushrooms, chopped
55ml/2fl oz red wine
450ml/16fl oz vegetable stock
400g/14oz can chopped tomatoes
400g/14oz can red kidney beans, drained
salt
freshly ground black pepper

Method
Heat the oil in a large frying pan. Toss in the onion and fry for 3-4 minutes.
Stir in the garlic, chilli powder, green chillies, vegetarian mince and mushrooms and fry until browned.
Pour in the red wine and, when this has evaporated, add the stock and the tomatoes. Cover and simmer for 20 minutes.
Add the kidney beans and simmer for a further 15 minutes.
Season to taste with salt and freshly ground black pepper.
Serve with corn bread and/or steamed rice and a spoon of tomato salsa.
