Nutty Brown Rice Salad

A recipe from Maria. This recipe is for one person

Portion of cooked (steamed) brown rice
Small handful of cashew nuts
Small handful of raisins
1/3 grated carrot
handful of French (string) green beans, lightly cooked and roughly chopped
1 cm cubed piece of raw ginger grated or finely chopped
Sprinkle chilli flakes
Sprinkle of coriander
Squeeze of honey
Juice of ½ lime
Good splash of tamari (or regular soy sauce)

Method:Mix all ingredients togetherIts best to do it when the rice is still a little bit warm, then the honey lime soy dressing can really blend into everything
Keeps for a day or two. Enjoy
