Middle Eastern Treat

This was lunch yesterday. Lentil rice, garlicky spinach salad and felafel. I even got Macky to eat it. He doesn't like anything with curry or anything that doesn't taste Filipino.

Lentil Rice
1/4 cup brown lentils soaked in 1 cup water for at least 30 minutes
3/4 cup Thai jasmine rice
1 tsp ground coriander
1 tsp ground cumin
dash of salt to taste
1 tsp vegetable oil
1-2 tbsp minced onion
3-3.5 cups water

Saute the onion in oil. Add the spices and mix well. Add the lentils and rice. Mix well. Add water and salt to taste. Transfer in a rice cooker and let it do the rest.

Garlicky Spinach Salad
A handful of spinach leaves, torn into small pieces
1 large tomato cut into small cubes
1 small cucumber cut into small cubes
about 1 tbsp minced onion

Garlic Sauce: 1 clove garlic, 1 cup yoghurt, 2 tbsp extra virgin olive oil, black pepper to taste, put everything in a blender. Mix it with the above ingredients and it's ready to serve.

Felafel
Ok, I cheated on this one as I used an instant felafel mix :-p

Arrange the three in a plate and serve with Budweiser non-alcoholic beer. Enjoy!
