INGREDIENTS
250g Flat Thai noodles
1-2 cups shredded cabbage
1/2 cup carrots cut into thin strips
1 mushroom stock cube
8-9 tbsp sweet soy sauce
2 tbsp white vinegar
1 tsp brown sugar
1/2 tsp black pepper
1 cup shelled peanuts
1-2 tbsp vegetable oil.
Cook the noodles according to the instructions found in the package. Set aside.
Mix the soy sauce, vinegar, and sugar. Set aside
Heat the oil in a saucepan, add the peanuts and stir fry for about a minute (I made a mistake of leaving it for a few minutes so it ended up a little burnt on one side), add the vegetables and stir fry for about 1 minute until the vegetables are soft.
Add the stock cube dissolved in 1-2 tbsp liquid from the noodles. Mix well.
Add the soy sauce-vinegar-sugar mixture and mix well. Remove from heat.
Add the noodles (drained if you used a lot of water in cooking it, just used enough so I didn't drain it last night), and mix everything thoroughly.
Serve and enjoy. You can top it with chopped spring onions, fried onions or fried eggs.
