Lentil and Spinach

Had this for dinner last night... with steamed rice.

INGREDIENTS
1/2 cup brown lentils, soaked in water for 20-30 minutes
a whole bunch of spinach... probably 4 cups total
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp ground cumin
1 tsp curry powder
1/2 tsp turmeric
1 vegetable stock cube
3-5 cups water
1-2 tbsp vegetable oil

INSTRUCTION
Heat the oil n a small saucepan. Reduce heat and add the mustard seeds. Wait until it starts to pop and then add the cumin seeds. Keep the heat to a minimum to prevent burning the spices. Add the rest of the spices. Mix well. Add the lentils. Mix well. Add the water and increase the heat. Once it starts to boil, reduce heat, and let the lentil cook for about 20 minutes. You can add the stock cube halfway through the process and you may need to add more water at some point. Once the lentil is done, add the spinach, mix well. Cover the saucepan, increase the heat for one minute and turn it off after. Let the steam cook the greens. Once the greens are wilted, your lentil and spinach dish is ready to serve.
