A simple stir-fried dinner


Stir-fried baby bokchoy with fried tofu puffs.  That was dinner this evening.  (The photo is not mine but the one I made looked like that except that it had more greens.)

Saute garlic (2 cloves, minced) in 1 tbsp vegetable oil, add the fried tofu puffs (basically fried tokwa prepared in advanced), stir fry for one minute.  Increase heat and add two handfuls of baby bokchoy, agan stir for 1-2 minutes until the leaves are slightly wilted.  Add 1-2 tbsp of light soy sauce and a dash or two of sesame oil.  Mix well and serve over a bowl of fresh steamed rice.  (I've eaten so much rice when I was in Davao so I decided to skip the Asian staple this time.)

 I'm in transit at the moment and will be moving to Europe next week for grad studies.  Two different but equally wonderful opportunities were laid before me earlier this year.  Both offer growth and opportunity to travel...  each has its consequences...  but I can only pursue one.

It has been said that life is full of choices.   Indeed it is.  Making the decision was difficult.  In the end, I had to choose what I believe is best and I take full responsibility for that decision.  Whatever the outcome of this decision, for sure, it will present itself in time.
