Fritz and I were supposed to look for this Evergreen Chinese vegetarian restaurant in Uyanguren (Davao City) but the Universe led us to this small but really nice and friendly eatery... Vegelicious Cuisine. 5 viands, 3 cups of rice, 2 glasses of fresh melon juice... all for only 150php (3.5USD). Too bad I wasn't into picture-taking lately so I didn't have camera with me. Anyway, for my Dabawenyo brothers and sisters, check the place out. It's right in the corner of Monteverde and Sales Streets, in front of RCBC Sta. Ana. You can also call them at (63 82) 2255612. Ginataang Langka & Fried Lumpia
INGREDIENTS
Young/unripe jackfruit, boiled in a little water until soft and cooked
Red kidney beans, cooked separately
Coconut milk
Garlic, tomato, ginger
Saute garlic, tomato and ginger in a little oil. Reduce heat and allow the flavors to come out slowly. Add the jackfruit, beans and just enough water to cover the vegetables. Mix well and allow to simmer for 3-5 minutes. Add the coconut milk and simmer for another minute or until the flavors integrate well. Serve with steamed rice.
Saute garlic and onion. Add mung bean sprouts, singkamas/jicama cut into thin strips, ubod (heart of palm) also sliced thinly. Stir fry for a minute or two. Set aside and let cool. Use about a spoonful of this per lumpia wrapper. Fry until golden brown and serve with garlic-vinegar dip.
Practice was great this morning. That's all what I can really say about it.
